All the buttons and text are all weird.

Like in the section where it tells all the buttons it says key.replaymod.lighting, or key.replaymod.pause or etc

and the pause button says replaymod.gui.ingame.menu.pause

any idea how to fix this

Use the previous version of fabric api.

This fixes replaymod but breaks optifine so if you use optifine you might just want to deal with the screwy labels.
