Which Replay version should I use for 1.7.10, because I have tried both 2.1.4 and the new beta one and they continue to prove to have bugs, crash and don't load chunks or entities? I even deleted Minecraft and re-downloaded it and the issue still persists.

The newer one, it'll have more bug fixes than the older one and most of the potentially unstable beta features aren't available on 1.7.10 anyway.
