OK I'll keep it short:

ReplayMod version: 1.11-2.0.0-b4

It seems to me that some scoreboard stats are not counting up by 1

stat.useItem.xxxxx does not work
(testet with carrot_on_a_stick, spawn_egg and ender_pearl)

sats.animalsBred and stats.playOneMinute works
I was using Optifine, too, but tested it with every combination of Forge, Optifine, and ReplayMod. The problem only occurs when ReplayMod is installed.
recording or not makes no difference.

After having a good look at this I'm fairly certain I know what causes this and how to resolve it.

For the time being (if you require both, ReplayMod and scoreboard objectives) you'll have to use a local server or wait for a fixed jar to be available. I wouldn't recommend waiting though.
